Cheesy Baked Potato Casserole

Recipe Ingredients:

  • ONE-MILE RANCH BACON (crumbled into bacon bits)
  • 8 medium yellow potatoes
  • 4 Tbsp butter (melted)
  • 1 /3 cup milk or cream
  • 1 /3 cup sour cream
  • Salt
  • Coarse black pepper
  • Shredded marble cheese
  • Green onion for garnish (optional)

Directions:

  1. Peel the potatoes, cut them in half, and place them in a large cooking pot. Cover with at least an inch of COLD water, add a tsp of salt, and bring to a boil.
  2. Once the potatoes are boiling turn down to low and simmer for 15-20 min until the potatoes are fork tender.
  3. Drain water and place potatoes in a bowl.
  4. Add butter, milk, sour cream, salt, and pepper to the potatoes and mash. ( I use a hand mixer, which makes it so fast and easy)
  5. Once the potatoes have a nice creamy consistency, spread them into a baking dish or preferably a large cast iron pan.
  6. Top with a nice layer of bacon bits and then a generous amount of shredded cheese.
  7. Cook in 425° oven for 15-20 min until the cheese is nice and bubbly.
  8. Serve with sour cream and chopped green onion.
