Greek Pita Wraps

Ingredients:
  • 1 ONE MILE RANCH PORK TENDERLOIN (cube into about 1 inch pieces)
  • Pita wraps
  • Tomatoes
  • Red onion
  • Sour cream

Marinade Ingredients:
  • 2 Tbsp lemon juice
  • 2 Tbsp honey
  • 1 tsp minced garlic
  • 4 Tbsp olive oil
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 2 tsp oregano
  • 1 tsp thyme

Directions:
  • Cut pork tenderloin into cubed pieces (about 1 inch in size)
  • Mix lemon juice, honey, minced garlic, olive oil, salt, pepper, oregano and thyme together in a bowl.
  • Place cubed tenderloin in zip lock bag and pour marinade contents in. Let marinade for at least 1 hour.
  • Soak wooden skewers in water for about 1/2 an hour before using.
  • When skewers are ready add 4-5 pork tenderloin cubes to each skewer.
  • Fry or BBQ skewers for approx. 2 min per 4 sides.
  • Make homemade pita wraps or use your favourite store bought ones and fry in oil.
  • When pitas are ready and pork is cooked, arrange the pita wrap with the pork skewer and top with sour cream, tomatoes, and red onion! ENJOY!
