Pumpkin Spice Beef Curry

Ingredients:
  • 1 lb. ONE MILE RANCH STEW MEAT
  • 3 Tbsp butter
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 Tbsp ginger, grated (1tsp ground ginger)
  • 5 Tbsp tomato paste
  • 1.5 cups chicken broth
  • 1 can coconut milk
  • Rice/Naan to serve
  • Optional: veggies to bulk up
  • 3 potatoes, diced
  • 2 carrots, diced

Spice:
  • 1 tsp pumpkin spice
  • 1 Tbsp smoked paprika
  • 1 Tbsp cumin
  • 2 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp cinnamon
  • 1 tsp salt
  • Optional: chili powder

Directions:
  • Mix spices in a small bowl and set aside.
  • Melt butter in a Cuisinart stove top casserole dish and add in onions. Cook over mid heat until onions sautéed/clear. (approx 5 min.)
  • Add in spice mix, garlic and ginger. Cook for 1 minute stirring constantly.
  • Add in tomato paste, chicken broth, ONE MILE RANCH STEW MEAT, coconut milk and diced veggies (if using). Stir and bring to a simmer.
  • Put a lid on and cook on low for 2-3 hours until stew meat is fall apart tender.
  • Serve with rice and naan bread!
