Scalloped Potatoes

Ingredients:
  • 7 or 8 medium potatoes
  • 1 medium sweet onion, diced
  • 3 Tbsp butter
  • 1 tsp minced garlic
  • 1/4 cup flour
  • 2 cups milk
  • 1tsp salt
  • 1/2 tsp course pepper
  • 1 cup grated cheese

Directions:
  • Preheat oven to 400°F
  • Peel potatoes and slice thinly and evenly. Assemble by layering into baking dish.
  • In a cast iron skillet, melt the butter and then add in the diced onion. Saute the onion on medium heat for about 4 min until translucent. Add in the garlic for an additional minute.
  • Next, add in the flour and saute it for about a minute to cook out the raw taste. Pour in the milk and whisk until smooth. Season with the salt and pepper.
  • Pour the sauce over the potatoes and top with a generous layer of grated cheese.
  • Cover with foil and bake for 30 min. Remove the foil and bake for another 30 min until the potatoes are tender and the cheese is golden brown. ENJOY!
